Chocolate Chip Gluten-Free Oatmeal Bake!

Who loves chocolate chip oatmeal cookies? I think it's safe to say we probably all do! This baked oatmeal is so delicious. It’s like having a thick and chewy oatmeal cookie for breakfast! All the flavors you know and love from chocolate chip oatmeal cookies transformed into a healthier baked oatmeal with not too many ingredients. Score! To get a real oatmeal “chocolate-chip cookie” flavor, I use miniature chocolate chips. My favorite are the mini chocolate chips by Enjoy Life. By using mini chips, they are spread evenly throughout every single bite. This recipe is literally the easiest thing to make and will quickly become a breakfast staple in your household. 


Ingredients:

- 1 1/2 cup gluten free old fashioned oatmeal (I love Bob's Red Mill)

- 1/4 cup of brown sugar

- 1 tsp of pumpkin spice

- 2 tsp of baking powder

- Dash of salt for taste

- 1/2 cup of milk

- 2 eggs

- 1 tsp of vanilla extract

- 1/4 cup of mini chocolate chips

- 4 tbsp of butter melted


Instructions:

1.) Preheat the oven to 350 degrees. Grease a 8x8 baking pan.

2.) In a large bowl, add together the oats, brown sugar, pumpkin spice, baking powder, and salt. Mix together thoroughly.

3.) Add in the milk, eggs, melted butter, and vanilla extract. Gently stir in the mini chocolate chips.

4.) Spread the mixture evenly in the prepared pan

5.) Bake for 25-30 minutes. Remove and allow to slightly cool. Serve warm. I added a spoonful of greek yogurt out top of the oatmeal and it was oh so delicious!!!
