Chocolate Covered Strawberries

Valentine's Day is just around the corner!! When I think of Valentine's Day, chocolate strawberries come to mind. A little glass of champagne paired with them isn't such a bad thought either. This is such a decadent but easy to make at home treat. For the best results you'll need to use the best chocolate and the ripest strawberries. I usually buy Guittard brand chocolate, it's so good. KIngs or Whole Foods is my go to for produce and the strawberries are usually perfect!!

Despite being one of the easiest desserts to make, chocolate covered strawberries are one of those bite sized treats that everyone loves!!

Here is how to make them:

1. Start by washing the strawberries and drying them VERY well. It's so important to dry the strawberries well because, as you may know, chocolate and water don't work well together! If the strawberries are the least bit wet the chocolate won't stick.

2. Next create a double boiler with a saucepan filled 1/4 full with water and top with a heat-proof glass bowl. Heat the water to a slow boil.

3. Add chocolate to the bowl and stir constantly, until chocolate is smooth.

4. Remove bowl from heat and add a small handful of chocolate chips to temper the hot chocolate.

5. Dip the strawberries into chocolate, coating most of the strawberry.

6. Place on parchment paper to dry.
